Clara Isabel Moncanut
Clara Isabel Moncaut has been producing coffee for 10 years and she considers it a family enterprise since she employs the help of her daughter who is studying agroindustrial engineering. Her farm Salsipuedes is located in the municipality of Timbio in the department of Cauca and has 2.5 hectares planted with coffee.The coffee at Finca Salsipuedes is picked ripe when the cherries turn purple, then they are fermented for 100 hours in airtight plastic containers, after they are de-pulped, fermented in cement tanks, and then sun-dried for 20 days. The coffee is stirred 4 times a day so it dries evenly.
